This recipe is quick to make, and is a favorite at our house! We usually
make it into a cake, but it is also great made into muffins instead--especially
for something easy to take along on a trip.
Blueberry Cake
2 eggs
1 cup milk
1/2 cup oil
3 cups all-purpose flour
1 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 16 oz. can blueberry pie filling
Heat oven to 400*. Grease one 9x13" cake pan. Beat egg;
stir in milk and oil. Mix in remaining ingredients just until flour is moistened. Batter
should be lumpy. Add blueberry pie filling, and gently swirl into batter (don't over-mix).
Bake 20-25 minutes or until golden brown. Yield: 9x13" cake, (or if you prefer, 2 dozen muffins)

Thanks for posting the recipe! Next time Graham is at the store I'm going to ask him to get blueberry pie filling so I can make it! :) It's been such a long time since I last had some and it is so good!
